Creamy Tuscan Chicken

I’m always on the lookout for people’s version of keto foods. I like to keep my dinners interesting and delicious.

I found this recipe and tweaked it a bit to my own tasting. With the recipe I provided below it’s for 4 servings.

Creamy Tuscan Chicken

 

 

Ingredients

  • 1 tablespoon of olive oil
  • 2 large chicken breasts that I cut in half so it is 4 thinner slices
  • 3 diced garlic cloves
  • ½ of onion, sliced
  • ½ of bell pepper, sliced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • ½ cup parmesan cheese, grated
  • 1 cup baby spinach
  • ½ cup sun-dried tomatoes

Directions

  1. Use a non-stick fry pan and put the oil in it. Let the oil heat up then put the chicken down. Let it cook for about 3-5 minutes, then flip over to cook for another 3-5 minutes.
  2. Pull the chicken out of the pan and put it onto a plate.
  3. Saute the garlic, onion, and pepper in the pan that the chicken was in until the onion is soft.
  4. Put the cream, broth, garlic powder, parmesan, and salt and pepper to taste.
  5. Let it cook for a bit to thicken, then add spinach and sun-dried tomatoes. Cook until the spinach wilts.
  6. After the spinach has wilted, add the chicken and let that cook for a few more minutes

Notes

  • I ate this with a side of cauliflower mash and roasted brussels sprouts
