I’m always on the lookout for people’s version of keto foods. I like to keep my dinners interesting and delicious.
I found this recipe and tweaked it a bit to my own tasting. With the recipe I provided below it’s for 4 servings.

Creamy Tuscan Chicken

Ingredients

- 1 tablespoon of olive oil
- 2 large chicken breasts that I cut in half so it is 4 thinner slices
- 3 diced garlic cloves
- ½ of onion, sliced
- ½ of bell pepper, sliced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- Salt and pepper to taste
- ½ cup parmesan cheese, grated
- 1 cup baby spinach
- ½ cup sun-dried tomatoes

Directions

- Use a non-stick fry pan and put the oil in it. Let the oil heat up then put the chicken down. Let it cook for about 3-5 minutes, then flip over to cook for another 3-5 minutes.
- Pull the chicken out of the pan and put it onto a plate.
- Saute the garlic, onion, and pepper in the pan that the chicken was in until the onion is soft.
- Put the cream, broth, garlic powder, parmesan, and salt and pepper to taste.
- Let it cook for a bit to thicken, then add spinach and sun-dried tomatoes. Cook until the spinach wilts.
- After the spinach has wilted, add the chicken and let that cook for a few more minutes
