Sausage and Mushroom Skillet

Ingredients

- 1 tablespoon coconut oil
- A package of Italian Sausage (I used Trader Joe’s chicken sausage)
- 4 ounces sliced mushrooms
- 1 small yellow onion, chopped
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- Salt and pepper
- 1/2 cup marinara sauce
- 8 oz mozzarella ball sliced

Directions

- Preheat the oven to 350°F.
- Heat oil in a large cast-iron skillet (or a regular skillet, but you’ll need to put if you choose to put it in the oven, then make sure the pan is oven safe or transfer to a glass pan) over medium heat until melted.
- Add the sausages and cook until browned and almost cooked through.
- Remove the sausages, then add the mushroom and onion to the skillet and cook for 3 to 4 minutes until browned.
- Add the sausages back to the skillet.
- Stir in the oregano, thyme, salt and pepper.
- Pour in the sauce then stir well.
- Add the mozzarella
- Transfer the skillet to the oven and cook for 10 minutes.
