Vanilla Chia Pudding with Strawberry Puree

This is a such an easy and quick meal if you are on the go or are rushing out the door in the morning. I make a couple of these the night before and stick them in the fridge. This was my breakfast for today and it will be my breakfast again on Thursday! And chia is such a great way to get your fiber in.

Calories: 155 calories

Fat: 7.6 grams

Protein: 6.8 grams

Carbs: 12.7 grams

Fiber: 11.2 grams

Net Carb: 1.5 grams

Chia Pudding

 

 

Ingredients

  • 2 tablespoons of chia seeds
  • 1/2 cup of almond milk
  • dash of vanilla paste

For puree (Blend these ingredients):

  • 10 strawberries
  • Juice of 1 lemon
  • 1 tsp of Sweve

Directions

  1. Combine chia seeds, almond milk, and vanilla in a container, stir so it mixes well and put it in the fridge overnight
  2. In the morning, mix the pudding to make sure the chia seeds are evenly distributed then top it off with the puree

Notes

  • Try it with other fruits, like blueberry, raspberry, etc
