Since I’ve been on the keto diet this is one of my go-to sides that I make regularly when I’m just not sure what to make as a side with my protein. If you love garlic mashed potatoes, you’ll love this!

Garlicky Cauliflower Mash

Ingredients
|
- 1 bag of frozen roasted cauliflower OR 1 head of cauliflower
- Splash of heavy cream
- 1 tablespoon butter or ghee
- 1/4 cup of shredded cheddar cheese
- salt and pepper to taste
- Optional: 6 cloves of roasted OR raw garlic

Directions

- If you are using fresh cauliflower – clean and trim the cauliflower, breaking it into medium sized pieces. Else, move to step 2
- Place in a microwave safe bowl with cream and butter/ghee
- Microwave for five minutes.
- Stir to coat cauliflower with cream/butter mixture. Microwave for another five minutes.
- Remove from the microwave and put the mixture into a food processor or a blender. Add the cheese, garlic, salt and pepper and puree until it is smooth.
- Season or add more cream, butter, salt, or pepper to taste.

- Top it with chopped chives or green onions
- Top with more cheese or sour cream
- To make it a “loaded”, add sour cream, cheese, crumbled bacon
