Creamy Brussels Sprouts

I’m always thinking of new ways to make my vegetables more interesting. And since I’ve been on this Keto diet I thought of the things that I could eat and try to throw something together that might be delicious. And I got lucky…this came out great!

Creamy Brussels Sprouts

 

 

Ingredients

  • 2 slices of bacon, chopped
  • 5 cloves of garlic, minced
  • 1/4 of onion, sliced
  • 1 bag of Brussels Sprouts, trimmed then cut in half
  • 2 oz of cream cheese, softened
  • Splash of chicken stock
  • 1/4 cup of mozzarella, shredded
  • 1/4 cup of parmesan, shredded
  • Salt and pepper to taste

Directions

  1. Toss bacon into a pan. I used a wok and cook until crispy, then remove it and put it on a plate with a paper towel so that it can soak up some of the oils
  2. Leave the bacon oil in the pan then add the garlic and onion. The oil will be hot so stir it quickly so it doesn’t burn then add the brussels sprouts
  3. After the brussels sprouts have softened a bit (like 3 minutes), add in the cream cheese and stir the best you can then add in a splash of chicken stock so that it thins out. I didn’t measure it, I just added some of the stock until the cream cheese thinned out a bit.
  4. Add in the mozzarella and parmesan, then stir until it melts. If it thickens too much, add more stock.
  5. Then salt and pepper to taste.
  6. Done!

Notes

  • Try other spices!
