Fried Rice

It’s been so long since I’ve last posted…but I’ve been heads down on my book so it’s been hard to think about my blog.

I’ve finished my book and am currently working on the editing process. So, today I want to share my recipe for fried rice. I made it this morning in an attempt to use up two-day old rice. I hope you all enjoy it! If you change anything up, please let me know. I love to make this if I have day old rice and a lot of random stuff in my fridge that I want to use. This recipe reflects what I did today, but you can always change it up by adding other ingredients.

Fried Rice

 

 

Ingredients

  • 1 teaspoon of oil, I used olive oil
  • 2 eggs
  • 1 tablespoon of butter
  • 3 chopped cloves of garlic
  • 1/2 chopped shallot
  • 2 diced hot dogs
  • 1 cup of frozen peas
  • 2 cups of baby kale
  • 2 cups of cooked rice
  • 1.5-2 tablespoons of soy sauce or tamari
  • 1/2-1 tablespoon of fish sauce
  • 1/2 tablespoon of sesame oil
  • Salt, pepper to taste

Directions

  1. Add oil to a wok over medium heat
  2. Add eggs to wok and scramble in the wok. After this has cooked set it aside in a separate bowl
  3. Add butter to the wok then add garlic and shallot until fragrant
  4. Add hot dogs until they are nice and crispy
  5. Toss in the peas and kale and cook until peas are no longer frozen and kale is wilted
  6. Add rice and mix in, then add the soy sauce, fish sauce, sesame oil, and salt and pepper, and scrambled eggs
  7. Taste it and see if it is to your taste, if not add more of whatever

Notes

  • I also like to add fresh ginger if I have it on hand
  • Use other proteins, like: steak, chicken, tofu, spam, whatever!
  • Use other vegetables, like: onion, bell peppers, corn, carrots
