Pulled Pork with dry rub

Do you own an Instant Pot by chance? We do…my husband likes to buy things with the thought that we’ll use it a ton… -_- we don’t.

Today was my first time using it and since I’m leaving for a few weeks I wanted to leave him with some food (hence why I made the red beans and rice and this pulled pork)…I’m pretty sure he hasn’t cooked anything in almost two months.

This also means this will be my last recipe until I return from my travels, so from here on out, I will post about my adventures in Japan! 😀

Pulled Pork

 

 

Ingredients

  • 3-5 lbs of pork shoulder
  • Seasoning, combine together
    • 1 tablespoon chili powder
    • 1 tablespoon salt
    • 1/2 teaspoon smoked paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon pepper
    • 1 teaspoon cumin
    • 1/4 teaspoon cinnamon
  • 1/4 cup of oil (vegetable or olive)
  • 1 onion, roughly chopped
  • 4-6 garlic cloves, roughly chopped
  • Chicken stock, enough to cover the meat

Directions

  1. Rub the meat with the seasoning and put in the fridge for 4-24 hours
  2. Turn Instant Pot on and select “saute”, pour in the oil and let it heat up
  3. Add the pork and sear each side (approximately 3 minutes)
  4. Toss in onion, garlic, and chicken stock
  5. Cover, lock, and close your seal
  6. Turn Instant Pot to Meat/Stew, Pressure high, and set to 90 minutes
  7. Take meat out, shred, or do whatever, but you’re done

Notes

  • After the pork is cooked shred and toss with BBQ sauce
  • Serve it plain with salad
  • I topped mine with jalapeno garlic aioli (the garlic aioli recipe with jalapeno added)
