Red Beans and Rice

Ingredients
|
- Dried red kidney beans (I used 2 16oz bags)
- 1 big onion, diced
- 3 sticks of celery, diced
- 2-5 Jalapeno peppers, seeded and diced
- 1 package of Louisiana sausage links (if you can get them, some Costco’s carry), penny sliced
- 1-2 packages of smoked andouille sausage, penny sliced
- Spices
- Black pepper
- Oregano leaves
- Salt
- Garlic powder
- 1-2 bay leaves

Directions

- Wash the beans
- Add the amount of water as suggested by the bag to cook the beans
- Before you start the boil add the jalapeno
- It will take about 1 1/2 to 2 hours for the beans to fully cook after they have cooked, add the other vegetables and the sausage
- Add all the seasoning and bay leaves and cook for another hour
- Taste it and season as you like, sorry I don’t have measurements my mom didn’t give me any so I just added until I liked the flavor

Notes

- Serve this over white rice or cauliflower rice
- Freezes well
- Add water as you like, more water = thinner red beans AND add more spices
|
