I’ve never made stuffed meatballs before, but let’s have fun with this! I hope you have fun with this as well.
Ingredients
- 1 onion, diced
- Bacon fat or oil of some kind
- 1lb of ground beef
- 1lb of ground pork
- Seasoning (dealers choice, add what you think will be yummy, below is what I used)
- Salt
- Pepper
- Garlic powder
- Onion powder
- Cinnamon
- 8 oz herbed goat cheese OR whatever cheese you want. I think cambozola would be amazing
Directions
- Turn oven to 400 degrees Fahrenheit
- Make caramelized onions. Heat up a pan with some bacon fat (or whatever) and toss in the onions until they become golden brown, be careful not to burn them since they are diced
- Combine all ingredients in a bowl except for the goat cheese
- Lightly oil the baking pan you are going to put the meatballs on to help it not stick
- After it’s well-combined start making the meatballs, then create a well in the meat (see picture below) and add about 1 oz of cheese in the well then cover with more meat
- Bake for 30-40 minutes, the time is dependent upon how big you made the meatballs
