Meatballs filled with cheese

I’ve never made stuffed meatballs before, but let’s have fun with this! I hope you have fun with this as well.

Ingredients

  • 1 onion, diced
  • Bacon fat or oil of some kind
  • 1lb of ground beef
  • 1lb of ground pork
  • Seasoning (dealers choice, add what you think will be yummy, below is what I used)
    • Salt
    • Pepper
    • Garlic powder
    • Onion powder
    • Cinnamon
  • 8 oz herbed goat cheese OR whatever cheese you want. I think cambozola would be amazing

Directions

  1. Turn oven to 400 degrees Fahrenheit
  2. Make caramelized onions. Heat up a pan with some bacon fat (or whatever) and toss in the onions until they become golden brown, be careful not to burn them since they are diced
  3. Combine all ingredients in a bowl except for the goat cheese
  4. Lightly oil the baking pan you are going to put the meatballs on to help it not stick
  5. After it’s well-combined start making the meatballs, then create a well in the meat (see picture below) and add about 1 oz of cheese in the well then cover with more meat
  6. Bake for 30-40 minutes, the time is dependent upon how big you made the meatballs
