Easy Mayo-Based Potato Salad

Welcome to Non-dessert recipe Tuesday. Today I’m going to share a potato salad recipe.I LOVE potato salad! And it is super easy to make on your own. This is one of those items that I don’t like to buy in the store because the flavor isn’t quite what I want.

I like potato salad with a little extra mayo, crunchy texture, and a bit of zip from mustard. I hope you enjoy this. As usual, please share any additions you may add or take if you do this recipe. To me, cooking is all about knowing your flavor palette and enhancing whatever you make to reflect that. If you want to make your own mayo I have a basic mayonnaise recipe on my blog. For this recipe, I added lemon and garlic to the mayo and I used the all of the mayo I made.

You’ll see in this recipe a lot of “to taste”. I put that there because it really is however much you like. I can’t tell you how much you should use.

Mayo-Based Potato Salad

 

 

Ingredients

  • 6-7 white potatoes, skinned and cubed
  • 1 small onion, finely chopped
  • 1 whole bunch of celery, finely chopped
  • 3 hard boiled eggs, chopped
  • Mayo (to taste)
  • Mustard (to taste)
  • Sweet relish or dill if you prefer (to taste)
  • Seasonings I used (feel free to use whatever you like) to taste
    • Salt
    • Pepper
    • Garlic Powder
    • Sweet paprika

Directions

  1. Boil a large pot of salted water for the diced potatoes. This should take about 15 minutes for the potatoes to be tender. I use a fork to test its readiness. If the fork goes in easily, it’s done. You don’t want to overcook because then it will easily turn into mashed potatoes as you incorporate the ingredients
  2. After the potatoes are done, remove from water immediately and let it cool in a large bowl. I put it in the fridge for about 30 minutes, making sure to stir the potatoes so it cools evenly.
  3. Add all of the remaining ingredients to the bowl and mix until it is well combined
  4. Done!

Notes

  • I would never use a baking potato, it has texture for potato salad, in my opinion
  • I like to dice the potatoes before boiling because it takes less time to cook
  • If you want to add another level of texture and flavor add some cooked, chopped bacon

    Have you ever used baked red potatoes?

    My favorite potatoe salad is baked red potatoes, hard boiled eggs, diced red onion and cilantro, tossed with olive oil mayonnaise and seasoned with salt, pepper, and garlic powder.
