What’s better than stuffed chicken? NOTHING! Okay, kidding, something, okay, most things…but this was pretty good, so I’m sharing it with you.
Ingredients
- 2 chicken breasts, pounded lightly and butterflied
- Basil leaves, fresh if you have it, else dried
- 1 ball of mozzarella
- 6 cloves of garlic, crushed
- 1 roasted red bell pepper
- Olive oil, flavored or plain
- Seasonings
- Salt
- Pepper
- Garlic powder
Directions
- Set oven to 400 degrees Fahrenheit
- Open the chicken breast and layer in this order (or whatever): basil, mozzarella, 3 cloves per breast, 1/2 bell pepper per breast. Sprinkle with seasonings and drizzle a little bit of oil
- Close the breast, top with more seasoning and drizzle with oil
- Bake for 30 minutes
- And serve! I served it with brussels sprouts
