Chicken breast, roasted peppers, and mozzarella

What’s better than stuffed chicken? NOTHING! Okay, kidding, something, okay, most things…but this was pretty good, so I’m sharing it with you.


  • 2 chicken breasts, pounded lightly and butterflied
  • Basil leaves, fresh if you have it, else dried
  • 1 ball of mozzarella
  • 6 cloves of garlic, crushed
  • 1 roasted red bell pepper
  • Olive oil, flavored or plain
  • Seasonings
    • Salt
    • Pepper
    • Garlic powder


  1. Set oven to 400 degrees Fahrenheit
  2. Open the chicken breast and layer in this order (or whatever): basil, mozzarella, 3 cloves per breast, 1/2 bell pepper per breast. Sprinkle with seasonings and drizzle a little bit of oil
  3. Close the breast, top with more seasoning and drizzle with oil
  4. Bake for 30 minutes
  5. And serve! I served it with brussels sprouts
