3.14 So pie not?

Yeah…my titles a play on words…I woke up this morning and wondered if I should make pie to commemorate the day…annnnddd yes I did.

Before I went to work I made pie crust and stuck it in the fridge for later. I figured I had bought apples and pears that I hadn’t gotten around to eating so this would be a good time to use them. The recipe can be found here.

The pie crust is to die for…it is so flaky and buttery! I basically spent all day eating salads JUST so I could have a slice of pie!

What’s in that bowl? Quinoa, raw bell pepper, raw carrots, toasted edamame, blistered tomato, baked tofu, and some feta.

It is almost halfway through March and I still need to finish my manuscripts to turn in for the writing contests at the end of the month 😦 Ugh, honestly, I should get finish those up.
