Baked Egg in Avocado

I love avocado, egg, and bacon, so I decided to make my version of it.

Serving size: 1

Ingredients:

  • 1 avocado, cut in half and pit removed
  • 2 eggs
  • 1 sprig of green onion, chopped
  • Seasoning (use whatever):
    • Salt
    • Pepper
    • Sweet Paprika
    • Garlic powder
  • 2 slices of bacon

Directions:

  1. Set oven to 425 degrees Fahrenheit
  2. I scoop a bit of the avocado out of the hole that the pit created to create room for the egg to rest in. To make sure the avocado was level I created my own platform for the skinny part of the avocado to rest on (see picture below)
  3. Crack the egg and put it in the hole in the avocado
  4. Sprinkle with seasoning ad top with green onion
  5. Put avocado in the oven to cook for 15 minutes
  6. Cook bacon until it is crispy then chop it up
  7. After avocado is taken out of the oven sprinkle it with the bacon
